
You might know David Chang from his show Ugly Delicious on Netflix, which follows Chang as he brings illustrious guests with him to explore different food traditions around the world. He’s also done many other impressive food-related things as well. But the show is in many ways the epitome of global connectedness, using food as a way to break down cultural barriers and increase cultural understanding. If you watch the show right now, many of those concepts might seem oddly distant. I highly recommend reading his entire interview if you have time, but the first part is mainly about how Covid is transforming the food landscape. I think it’s too early to say whether the restaurant industry will survive; the NYT headline is definitely an oversimplification of his argument. Nevertheless, he makes some compelling points. Frankly, I could have posted this in the “Culture” section because Chang does an excellent job of getting at how Covid is also changing our relationship to food/restaurant culture, not just the economic fact that there are a lot of businesses – especially the small ones – that will suffer great losses.
